The Gabon striker scored the only goal of the game at St James’ Park as he controlled the ball and poked home from close range to hand the north London side all three points.
Aubameyang will be hoping to play an important role for Arsenal this season as Unai Emery’s men look to try and challenge for a top-four finish.
And former Manchester United boss Mourinho, who was on punditry duty for Sky Sports on Sunday, was very impressed by Aubameyang’s display and goal.
Speaking to Sky Sports after the game, Mourinho said: “I think he loves to be in front of the keeper.
“He is cool, he loves to be there. Simplicity sometimes is genius – and that control looked simple. It’s not simple, but it is genius. And then the finish is beautiful.”
Mourinho also talked up the importance of Arsenal getting their season off to a good start by claiming three points at St James’ Park.
He continued: “For Arsenal, in a match in which they were not very, very good, to get the three points is very important to them.”
Arsenal will return to Premier League action on Saturday lunchtime when they host Burnley at The Emirates.
The north London side are aiming to try and break back into the top four this season after they finished fifth and without a trophy last term.
Arsenal have not won the Premier League since their famous unbeaten triumph in 2003-04.
