Intermittent fasting meals: Goats’ cheese spaghetti and peanut chicken recipies

Personal trainer Max Lowery shares two recipes from his new intermittent fasting meal and workout plan - The Fit Fast

Here are two healthy intermittent fasting recipes, taken from personal trainer Max Lowery’s new plan – The Fit Fast.

Post workout carb recipe: Goats’ cheese spaghetti

Ingredients:
80g Spaghetti (cooked)

2 rashers bacon 

40-60g Soft goats’ cheese 

Spinach 

Peas 

Half an onion

50ml vegetable stock 


Method: Cook the pasta following pack instructions. Meanwhile, heat the oil in a large frying pan, then add the onion and cook for 3 minutes until starting to soften. Add the bacon, cook for a further 5 minutes, then pour in the hot stock and bring to the boil. Simmer for a few minutes until the liquid has reduced slightly. Stir in the peas, followed by the cheese, until the cheese has melted and the peas are defrosted. Quickly stir through the spinach to wilt. Drain the pasta and mix with the sauce, then serve.

Low carb recipe: Peanut chicken

Ingredients:
216g Chicken breast 

2 Tbsp peanut butter 

1 Small chilli (Chopped) 

1 Chunk ginger (Chopped) 

2 Tbsp sesame oil 

2 Tbsp soy sauce 

Bok choi 


Method: Turn on oven to 200C. Mix Peanut butter, chilli, ginger, sesame oil, and soy sauce in a bowl. Layer on top of chicken. Place chicken in the oven for 20-25 minutes. Once chicken has been cooking for 15 minutes, chop bok choi and fry in a wok with sesame oil and soy sauce for 5-7 minutes. Serve chicken on top of bok choi.
